1/2 c. chicken broth
2 T. chopped garlic
2 zucchini, cubed
1 28-oz. can plum tomatoes, undrained
2 T. chili powder
2 t. ground cumin
2 t. dried oregano
1/8 t. allspice
3 chicken breasts, cooked and chopped
1 can kidney beans
1 T. lemon juice
4 T. parsley, chopped
Black Pepper to taste
In a pan, simmer together: chicken broth and garlic add zuccini and cook until tender. Add tomatoes, chili powder, cumin, oregano and allspice. Simmer for three minutes. Add chicken, kidney beans, lemon juice, parsley, and black pepper. Simmer 10-12 minutes.
